Mothers Day Lemon Blueberry Cake will sure to be a crowd pleaser, this cake is bound to impress any Mother out there!

It’s a simple enough recipe for kiddies to make with some help and Mum will love it.

Bake the cake in the morning, then decorate it when the cake is cold.

Lemon zest makes a simple stylish topping; flowers are just perfect for the Mothers or let the kids loose with sprinkles and edible glitter!

This recipe serves 8-10 people and you can freeze the cake un-iced if time isn’t on your side and you want to decorate later on.

Mothers Day Lemon Blueberry Cake Ingredients

  • 175g soft unsalted butter
  • 100g Greek yoghurt
  • 2 tbsps of lemon curd
  • 3 eggs
  • Zest and juice of 1 lemon (plus extra to serve if you like)
  • 200g self-raising flour
  • 175g golden caster sugar
  • 85g blueberries
  • 140g icing sugar
  • Decorations, I’ve used edible flowers (primroses)

Mothers Day Lemon Blueberry Cake Method

  1. Heat the oven to 160C/140Cfan/GM3.
  2. Grease a 2lb loaf tin and line with a long strip of baking parchment.
  3. Put the yoghurt, lemon curd, soft butter, eggs, lemon zest, flour and caster sugar into a large mixing bowl.
  4. Quickly mix with an electric whisk until the batter just comes together.
  5. Scrape half into the prepared tin.
  6. Sprinkle half of the blueberries on top of the batter.
  7. Scrape the rest of the batter into the tin on top of the blueberries.
  8. Scatter the remaining blueberries on top.
  9. Bake for 1 hr 10mins – 1 hr 15mins until golden and a skewer come out clean when inserted into the middle of the cake.
  10. Cool in the tin.
  11. Then carefully lift out of the tin using the ends of the baking parchment and place on a plate to serve.
  12. Sift the icing sugar into a bowl and stir in enough lemon juice to make a thick, smooth icing.
  13. Spread over the top of the cake.
  14. Decorate with your toppings.

Serve in slices with extra lemon curd, Greek yoghurt and blueberries or with just a lovely cup of tea.
