Total Sweet Chocolate Cheesecake – this may look really sweet, but you may be surprised to know that I’ve used Total Sweet instead of sugar to make it.

I was sent some Total Sweet to have a play with, to see what I thought of it and how it tasted compared to normal sugar.

Total Sweet is a sugar alternative, a totally natural sugar replacement whose sole ingredient is birch wood xylitol.

It looks and tastes like sugar and can be used in exactly the same way in cooking and baking (except bread making) and is said to have a number of health benefits.

I have to say; when I tasted the chocolate cheesecake I couldn’t taste the difference!

This recipe serves 8 people.

Total Sweet Chocolate Cheesecake

Base Ingredients

  • 100g of walnuts
  • 100g of rough oatcakes
  • 70g of coconut oil melted
  • 30g of Total Sweet

Filling Ingredients

  • 400g dark chocolate broken into chunks
  • 375g plain cottage cheese
  • 300g natural yoghurt
  • 2 free range egg yolks
  • 4 free range egg whites

Method

  1. Preheat the oven to 160C/325F/GM3
  2. Line a 20cm (8in) loose-bottomed cake tin with baking paper.
  3. Place the base ingredients into a food processor and whizz until the consistency of coarse breadcrumbs.
  4. Press the mixture firmly into the bottom of the lined tin using the underside of a metal tablespoon, so that it covers the base of the tin evenly.
  5. Bake for 10 minutes then set aside.
  6. Melt the chocolate over a bain-marie or in the microwave.
  7. In a large bowl, blend the cottage cheese, yoghurt and melted chocolate until smooth.
  8. Then quickly blend in the egg yolks.
  9. Whisk the egg whites until they form stiff peaks.
  10. Gently fold them into the chocolate mixture until evenly blended.
  11. Pour into the prepared cake tin and cook for about 60-75 minutes, or until the top is just firm to the touch.
  12. Allow to cool on a wire rack and then chill.
  13. Dust with some icing sugar and garnish with sliced strawberries.

It tastes and looks like single cream, but its plant based and has less saturated fat.

My Total Sweet Chocolate Cheesecake looks delicious doesn’t it?!

Total Sweet was a new experience for me and one I will definitely make again, Total Sweet means totally yummy!
