The Alpro coconut range I will say is one of my favourites!
If it’s got coconut in it, I’m there like a shot!
So I was delighted when I was asked by the Alpro PR team if I’d like to devise some recipes using their plant based alternatives.
I’m a huge Alpro fan and use it almost every day in my cooking and eating, especially smoothies
I decided that I’d like to create a couple of breakfast bowls and then go for a healthy treat!
Firstly I made some delicious homemade granola because I have a bit of an addiction!
It also tastes fabulous and adds a bit of crunchy texture to a smoothie bowl.
Nutty Granola
Makes 375g
- 35g chopped Brazil nuts
- 35g chopped macadamias
- 35g chopped cashews
- 20g flaked almonds
- 35g chopped walnuts
- 50g quinoa
- 2 tbsps pumpkin seeds
- 2 tbsps sunflower seeds
- 30g shredded coconut
- ½ tsp ground cinnamon
- 1 tbsp melted coconut oil
- 1 tbsp maple syrup
Method
- Place all of the ingredients in a large bowl and mix well.
- Spread out onto a baking tray lined with baking parchment.
- Clump the mixture together to form clusters.
- Bake for 10 minutes until golden brown.
Alpro Coconut Range – Mango Coconut Smoothie Bowl
- I blended together some of the Alpro Plain With Coconut and some chopped fresh mango.
- I filled my bowl with the delicious creamy mixture.
- Then I popped on a generous layer of my granola.
- A layer of shredded coconut.
- A couple of fresh cherries and a couple of chunks of vegan chocolate.
Alpro Coconut Range – Blueberry Breakfast Yoghurt
- I popped some of my granola into the base of the glass.
- I blended together some of the Alpro Plain With Coconut and some frozen blueberries.
- I then added a layer of this into my glass.
- Another layer of granola and then topped with the yoghurt alternative.
- I finished with some edible flowers.
Alpro Coconut Range – Coconut Chocolate Lollies
- 235mls Alpro Coconut Original Drink
- 10oz unsweetened vegan chocolate chips
- 250g pitted dates
- 400mls water
Method
- Warm the coconut drink in a small saucepan over a medium heat.
- When you see a bit of steam remove from the heat and stir in the chocolate.
- Let it sit for 5 minutes until the chocolate has melted.
- Combine the dates and water, cover and cook for 10 minutes over a medium heat.
- Drain and reserve the water.
- Puree the dates and just enough of the water to get a thick and creamy consistency.
- Pop the puree and the chocolate mixture into a blender.
- Blend until smooth.
- Pour into lolly moulds and place into the freezer for at least 8 hours (I left mine overnight)
