Broccoli And Brazil Nut Protein Balls

Broccoli And Brazil Nut Protein Balls are so simple to make and can be eaten raw or baked.

I prefer to bake mine.

They will keep in an airtight container for a week so perfect for snacking.

Raw or baked they are simply delicious and taste like a mouthful of goodness!

This recipe makes 8-10 medium sized balls.

Broccoli And Brazil Nut Protein Balls – Ingredients

  • 100g brazil nuts
  • 50g pumpkin seeds
  • 3 tbsp ground flaxseed powder
  • 100g broccoli florets and stems, chopped
  • 100g carrots, chopped
  • 2 tbsp melted coconut oil (I’ve used Lucy Bee)
  • ½ tsp ground cumin
  • Sesame seeds to coat (optional)

Method

  1. Put the nuts and the seeds into a food processor and blitz under a fine texture.
  2. Add the rest of the ingredients and whizz again until combined.
  3. The mixture should have started to form a sticky ball.
  4. Season to taste.
  5. Take small handfuls of the mixture and roll into balls.
  6. Put the sesame seeds onto a separate plate.
  7. Roll the balls around in the sesame seeds to coat them.
  8. If you’d prefer to eat the balls raw, put them into the fridge for one hour.
  9. Or into the freezer for twenty minutes to firm up.
  10. If baking, place on a baking tray.
  11. Bake in a preheated oven at 200C/Fan 180C/400F for around 15 minutes.
  12. When I bake mine, they are usually baked at 12 minutes in the oven.
  13. Leave to cool on the tray for ten minutes to firm up before eating.

I’ve found they will happily eat these little balls of goodness.

Because the veg is hidden deep inside!

This is a repeat recipe for me because I can just pop a couple in a tub and eat on the go!
