Baking With Lucy Bee Coconut Oil

Baking with Lucy Bee Coconut Oil is part of my weekend rituals; this coconut oil never makes it into my store cupboard because I use it in every meal and part of my beauty routine.

If you pop round my place at the weekend, I can be found in my kitchen, mixing and pouring like a mad scientist trying to find the perfect spell for that perfect bake.

I hold my hands up, I love cake!

But I don’t ever buy shop bought cakes, I like to bake my own so I know what’s gone into the mix and that there is an element of healthiness for all.

These Coconut, Banana & Cherry muffins were a happy accident!

I hate throwing produce out, I hate waste so I try to use up whatever I buy.

I had some bananas to use up and a rare occasion of some fresh cherries leftover that are far too expensive a fruit to even consider disposing of.

With the ingredients I had I managed to make eleven good sized muffins that I served at breakfast for some friends, they didn’t sit on the plate for long!

Baking With Lucy Bee Coconut Oil Ingredients

  • ½ cup shredded coconut
  • 1 tbsp linseed
  • 2 tbsps brown sugar
  • 1/3 cup teff flour
  • ¼ cup vanilla yoghurt
  • 1/3 cup coconut flour
  • 1/3 cup melted coconut oil
  • 2/3 cup roughly chopped frozen cherries
  • 3 bananas mashed
  • 2 tsps baking powder
  • 4 beaten eggs

Method

  1. Preheat the oven to 180C and line a muffin tray with paper cases.
  2. Combine the linseed, half the shredded coconut and one tablespoon of the sugar into a bowl.
  3. Set this mixture aside to sprinkle on the top of your muffins before baking.
  4. Mix the coconut oil and remaining sugar until well combined.
  5. Beat in two of the eggs and half of the coconut flour.
  6. Mix well before adding the rest of the egg and flour.
  7. Add the teff flour, baking powder, remaining coconut, banana and cherries and stir well to form a batter.
  8. Spoon the mixture into the muffin cases.
  9. Sprinkle the tops with the coconut crumble mix you made earlier.
  10. Bake until firm and a skewer come out clean when inserted into the middle of a muffin (about 30 minutes)
  11. Cool on a wire rack.

Serve alone or with vanilla yoghurt like I have for a delicious breakfast.
