Having won the Lucy Bee Coconut Oil Pic Of The Day on Instagram (Yippee!) with my recipe for these vegan Coconut Chocolate Brownies, I was inundated with recipe requests.
So here you are, all you lovely people who got in contact with me and to all you lovely people who have just stumbled across me!
There will be lots more vegan recipes coming to Crystal and Vanilla and they will more than likely have my beloved Lucy Bee Coconut Oil within them!
This recipe makes 9 generous chunks.
Ingredients
- 100g of vegan margarine
- 175g of raw vegan chocolate (I’ve used chocolate from Cococaravan)
- 50g of shredded coconut
- 1 tbsp of melted Lucy Bee Coconut Oil
- Vegan Egg Replacer (depending on which you use, the equivalent of 2 eggs)
- 100g of Natural pure cane sugar (I’ve used Tate & Lyle)
- 75g self -raising flour, sifted.
- Pinch of salt.
Method
- Heat your oven to 180C/350F/GM4.
- Grease and base line an 18 x 18cm (7 x 7 in) shallow square tin.
- Melt the margarine and 50g (2oz) of the chocolate together in a saucepan.
- Roughly chop the remaining chocolate.
- Beat the egg replacer and sugar together until pale and thick.
- Stir in the melted margarine mixture.
- Fold in the shredded coconut.
- Stir in the melted Lucy Bee.
- Finally fold in the sifted flour and salt.
- Transfer the mixture into your prepared tin and sprinkle the top with the chocolate pieces, some chunks will sink but don’t worry about this, it just means that when you bite into them you’ll bite into a delicious chunk of semi melted chocolate, yum!
- Cook in the oven for about 25 – 30 minutes depending on your oven until firm to the touch.
- Cool in the tin for 10 minutes and then cut into 9 squares.
I’ve used this shredded coconut in this recipe, I find the flavour more intense.
Cococaravan is a lovely little website where they hand make all of their delicious vegan chocolate. I used the Coconut Mylk version in this brownie recipe.
If like us, when the brownies are cooled,there may be a rush to get the middle square, because it always looks like it has the most chunks!
Perfect with a glass of coconut milk, in my case anyway but you decide!
Now we’re well into Autumn, these brownies are also delicious served warm with some vegan ice-cream.
