Christmas Egg Nog

Christmas Egg Nog! Christmas wouldn’t be Christmas without it!

Deliciously thick and creamy with a touch of rum to warm the cockles of your heart, it’s a cuddle in a cup!

After you’ve made it once, I’m sure it’ll become a Christmas tradition!

This recipe makes eight 125ml cups or glasses.

I’ve used expresso cups because it makes the egg nog look a bit fancy!

Christmas Egg Nog Ingredients

  • 100g caster sugar
  • 2 large eggs, separated
  • 600ml whole milk
  • ¼ tsp vanilla extract
  • 100ml rum
  • 100ml whipping cream
  • ½ tsp freshly grated nutmeg

Method

  1. Put the caster sugar and egg yolks into a bowl and whisk with either a balloon whisk or electric hand whisk until thick and creamy. I always use an electric whisk because it makes the mixture really creamy.
  2. Heat the milk in a saucepan over a medium heat until almost boiling.
  3. Remove from the heat and pour into the egg and sugar mixture, whisking all the time so you don’t end up with scrambled egg!
  4. Pour the whisked mixture back into the pan and heat gently, stirring, until smooth and slightly thickened.
  5. Add the vanilla and rum and whisk well.
  6. Remove from the heat.
  7. In a separate bowl, beat the egg whites until they form soft peaks.
  8. Fold into the cooled egg and milk mixture.
  9. Beat the whipping cream until thick.
  10. Fold three quarters of the cream into the egg and milk mixture.
  11. Chill everything in the fridge until ready to serve.

To serve, ladle into 8 glasses or cups and dollop 1 tsp of the remaining whipped cream on top of each.

Finish with a good sprinkling of the grated nutmeg.

This Christmas Egg Nog can be made a day ahead but you need to keep it chilled and serve it within 24 hours.
