Orange Blossom Cupcakes – I love cupcakes and I love Lindt Lindor, my favourite chocolate, so put them together and you have a moment of bliss!
I’ve been practising this recipe for a while and now it’s ready to share with all you cupcake and Lindor lovers, enjoy!
Serves 12
Orange Blossom Cupcakes ingredients
- 110g unsalted butter, at room temperature
- 225g golden caster sugar
- 2 large eggs
- 150g self-raising flour, sifted
- 125g plain flour, sifted
- 90ml semi-skimmed milk
- 2 tbsps freshly squeezed orange juice
- 1 tsp grated orange zest
- 12 Lindor chocolates
Method
- Preheat the oven to 160C(fan) 180C/350F/GM 4 and line a 12 hole muffin tray with cupcake cases.
- In a large mixing bowl cream the butter and the sugar until pale and fluffy.
- Add the eggs one at a time, mixing for a few minutes after each addition.
- Combine the flours together in a separate bowl.
- Add one third of the flours to the creamed mixture and beat well.
- Put in half the milk and beat well.
- Add another third of the flour and beat again.
- Beat in the remainder of the milk and all of the orange juice.
- Finish by adding the last third of the flour and the orange zest and beat well.
- Carefully add a dessertspoon of the mixture into each cupcake case.
- Add one Lindor into each cupcake case and press down gently.
- Cover the Lindor with enough mixture to hide it completely.
- Bake in the oven for 25 minutes until lightly golden brown.
- Remove from the oven and leave the cakes in the tin for 10 minutes before transferring to a wire rack to cool.
- When they are completely cold decorate with the icing and flowers.
Orange Blossom Buttercream Icing Ingredients
- 115g unsalted butter, at room temperature
- 2 tbsps freshly squeezed orange juice
- 500g icing sugar, sifted
- 2 tsps orange blossom water
Method
- In a large mixing bowl beat the sugar, juice and half of the icing sugar until smooth.
- Gradually add the remainder of the icing sugar and beat until smooth and creamy.
- dd the orange blossom water and beat again.
- Taste to see if the icing is flavoured enough, add a little more if necessary.
- You can either use a knife to spread your icing onto the cupcakes or use a piping bag like I did.
- Pop your flower on top, I used Dr Oetker wafer flowers.
- Now what you see is not what you get! When you give away one of these cupcakes you give away a moment of bliss!
- Watch to see the look of surprise and joy when someone bites into your freshly made cupcakes.
