Banana Walnut Loaf Recipe – If you get to the end of the week and you have a bunch of sad looking bananas, don’t throw them away!
This easy recipe was my Grans and it’s totally delicious on its own, with a little butter or a swirl of Manuka honey.
I find that if I leave it wrapped in foil and then placed in an airtight container for a couple of days it enriches the cake and makes it moist and squidgy (technical term!) But that’s only if you can resist slicing into it!
Banana Walnut Loaf
- 8oz of self raising flour sifted
- Pinch of salt
- Pinch of mixed spice
- 4oz of unsalted room temperature butter
- 6oz caster sugar
- 4oz mixed peel
- 2oz chopped walnuts
- 450gms really ripe bananas – mashed
- 2 eggs beaten lightly
Method
- Preheat the oven to 180C/Gas Mark 4
- Grease and flour a two pound loaf tin.
- Sieve the flour, salt and spice together into a mixing bowl
- Rub the butter into the flour until you see a breadcrumb texture.
- Add the remaining ingredients and beat well with a wooden spoon.
- Spoon the mixture into the prepared tin and bake for 60mins (depending on your oven) then reduce the heat to 170C/GM3 and bake for a further 30-45mins. If you find that the top of the cake is browning too quickly then put a sheet of parchment paper loosely over the top of the cake tin.
- Turn the cake out onto a wire rack and let it go cold completely so it’s easier to cut.
- Either wrap in foil and store or slice and enjoy, you can even have this with a little bit of butter!
