Rock Cakes Recipe, you only need 6 ingredients and half an hour of your time to bake 12 rock cakes!
I quite often bake for charity events and this recipe is a firm favourite in helping to raise money, although I’m sure they would look just as good in a lunch box or with a cup of tea.
This recipe can easily be doubled up to make a bigger batch and I know from experience that the only thing that will be left on the plate is crumbs!
As a child, I remember my Gran making these.
She used to say, if you find out last minute you’re going to have guests, Rock Cakes are the quickest and easiest cakes to make.
Rock Cakes Recipe
200g Self Raising flour
50g ground almonds
90g unsalted butter
90g caster sugar
90g dried mixed fruit
1 large egg, beaten
Method
Preheat the oven to 190c/GM5.
Butter a baking sheet.
In a large bowl, sift the flour with the ground almonds.
Rub in the butter until the mixture resembles fine breadcrumbs.
Stir in the sugar and dried fruit.
Make a well in the centre of the mixture and add the beaten egg.
With a round bladed knife, mix together until a soft dough forms.
Divide the dough into 12 rough shaped pieces and place on the baking sheet.
Roughen the surface with a fork.
Bake in the middle of the oven for between 12-15 minutes, turning the tray after half the time has passed.
Take out of the oven and sprinkle with caster sugar.
Transfer to a wire rack to cool.
You can store these little cakes for 2-3 days.
