Pea Mint Feta Fritters are yummy! I love freshly shelled peas! It reminds me of my childhood!
My Gran used to ask me to help her shell a huge bowl of pea pods. That’s why I love to make these Pea Mint Feta Fritters.
Perfect for barbeques, or even TV suppers, they are so quick and easy to make and if your little ones don’t like their veggies, maybe these will go down well. Hidden veg!
This recipe serves 4 and I promise you that it’s worth the effort of shelling all those peas!
You may have to buy an extra bag of peas though, just to make sure that you have enough!
If you’re like me, you’ll be eating them as you go along!
Pea Mint Feta Fritters
- 100g plain flour
- 1 tsp baking powder
- ½ tsp cayenne pepper
- 25g pack of fresh mint (leaves only) chopped
- 1 clove garlic crushed
- Finely grated zest of ½ lemon
- 2 large eggs, beaten
- 75ml semi-skimmed milk
- 250g shelled fresh peas
- 100g feta cheese, crumbled
- Coconut Oil for frying (I’ve used Lucy Bee)
Method
- Sift the flour into a bowl with the baking powder, cayenne and salt and pepper.
- Stir in the chopped mint, garlic and lemon zest and mix to a thick batter with the beaten eggs and milk.
- Blanch the peas in boiling water for I minute and the refresh under cold running water, drain thoroughly.
- Fold the peas into the batter mixture with the crumbled feta.
- Heat the coconut oil in a large frying pan.
- Drop 4 separate tablespoons of the mixture into the pan and cook for 3-4 minutes on each side until golden brown.
- Drain the fritters on kitchen paper and keep them warm whilst you cook the remaining 4 tablespoons.
I’ve served mine with a mint Tzatziki with chopped cucumber.
