Rich Chocolate Cookie Recipe, the ultimate cookie for me I think!
Crispy on the outside and soft and chewy on the inside, these cookies taste like a brownie but look like a cookie!
Easy enough to make with your kids and enjoy with a glass of milk during the school holidays or perfect for us big kids with a cuppa tea! What a treat!
This recipe makes approximately 30 cookies.
Rich Chocolate Cookie Recipe
- 400g good quality dark chocolate (70% cocoa)
- 225g unsalted butter, softened
- 200g golden caster sugar
- 200g dark brown soft sugar
- 1 beaten egg (medium)
- 1 tbsp treacle
- 2 tsp vanilla extract
- 300g plain flour
- 125g cocoa powder
- 2 tsp baking powder
- 1 tsp crushed sea salt
Method
Melt 150g of the chocolate in a bowl over a pan of simmering water. Remove from the heat and cool briefly.
In a large bowl, cream the butters and sugars together until light.
Beat in the egg, treacle, vanilla and melted chocolate. Mix together really well.
Mix the dry ingredients together in another bowl.
Beat into the chocolate mixture with 150g of chopped chocolate until you have a dough.
Transfer to a large sheet of baking paper and mould into a sausage shape about 40cm long.
Wrap loosely in the paper, tie the ends and chill for about an hour.
Preheat the oven to 190C/GM 5.
Cut the dough into 1cm thick slices and place them on baking paper on a baking tray (you will need to bake them in batches of about 8-10 pieces.
Bake for 10 minutes until cracked on top and soft.
Leave to cool on the tray for 10 minutes and then transfer to a wire rack.
Spread the cookies over a large sheet of baking paper.
Melt the remaining chocolate (as above) then drizzle over the cookies.
Leave to set for 10 minutes.
